Low Carb Fajita Casserole

Please bare with me I know it has been a very long time since I have made a post :). I have not even put a design up on the blog to make it pretty yet :O. Life sure has been busy that is all lol. I have taken up the low carb eating lifestyle and went to experiment the other night with what I had at the house and this recipe has evolved! It is very yummy and I usually eat a salad on the side with it for my veggies.

Low Carb Fajita Casserole
Makes 4 servings
Net carbs per serving: 3.5

Ingredients:
1 lb ground beef
1/2 small onion, chopped
1 green bell pepper, chopped
2 cups (1 package) Kraft Italian Five Cheese, Shredded
Badia Complete Seasoning

Instructions:
Preheat oven to 350 degrees

Chop up half a small onion (I use sweet onions) and 1 bell pepper. You can also add in a red bell pepper and go half on that and half on the green.

Brown ground beef, onions, peppers and Badia Complete Seasoning.
 I used about 4 tsps of the seasoning. I don't really measure its approx. so I just put a thin layer on top and when I go to stir up the ground beef I toss another thin layer.

Once everything is browned toss into a casserole dish. I used a 8x8.

Layer the whole package of Italian cheese on top and cook until cheese on top is nicely melted.

Dive in, its delicious!
